Turmeric Cauliflower With Tahini Maple Drizzle

I feel like I’m always cooking cauliflower the same way. Time to switch it up with this Turmeric Cauliflower With Tahini Maple Drizzle. This recipe is a delicious twist on your basic roasted cauliflower. The tahini maple drizzle adds a good source of healthy fats to keep you fuller for longer.

This dish is excellent in bowls and salads, or on the side of a protein source. I served this dish alongside my Crispy Dijon Thyme Smashed Potatoes with some tofu and it was excellent 🙂 As well as being meal prep friendly~

To prepare, preheat your oven to 425 degrees. Break the cauliflower into florets and transfer to a lined baking tray, toss with oil, turmeric, cumin, salt, and pepper. Roast for 30 minutes. In the meantime whisk together the tahini and maple syrup. You may find the tahini thickens up as it combines, just add a tablespoon of water too thin it out. After 30 minutes, remove cauliflower from oven, drizzle with Tahini Maple. Serve and enjoy!

Ingredients

  • Turmeric Cauliflower
  • 1 Head Cauliflower, Broken Into Florets

  • 1 Tbsp Oil

  • 1/2 Tsp Turmeric

  • 1/2 Tsp Cumin

  • 1/4 Tsp Each Salt + Pepper

  • Tahini Maple
  • 2 Tbsp Tahini

  • 1 Tbsp Maple Syrup

  • 1 Tbsp Water as needed to thin

Directions

  • Preheat oven to 425 degrees.
  • Break cauliflower into florets and transfer to a lined baking tray, toss with oil, turmeric, cumin, salt, and pepper.
  • Roast for 30 minutes. In the meantime whisk together the tahini and maple syrup. Adding water if needed too thin.
  • After 30 minutes, remove cauliflower from oven, drizzle with Tahini Maple and serve as desired.

Notes

  • Store leftovers in fridge for 4-5 days
