The Best Breakfast Potatoes

Happy long weekend, today I’m sharing a perfect recipe to add to your long weekend brunch, the Best Breakfast Potatoes! These are the perfect side to tofu scramble, or topped with tempeh.

To prepare, preheat your oven to 425 degrees. Start washing and dicing the potatoes, toss them with a drizzle of oil, herbs, spices, and nutritional yeast. Bake these for 30 minutes.

Next dice the onion and bell pepper. When there are about 10 minutes left on the oven, sauté the onion and bell pepper. When the potatoes are done, add them to the pan along with the kale, tamari and maple syrup. Toss all this together and serve! I enjoy these with smokey tempeh or tofu, ketchup, and hemp hearts.

Ingredients

  • 1.5lbs Potato, Diced

  • 1 Onion, Diced

  • 1 Bell Pepper, Diced

  • 1/2 Tbsp Thyme

  • 1/2 Tsp Oregano

  • 1/4 Tsp Smoked Paprika

  • 1/4 Tsp Garlic Powder

  • 1/4 Tsp Pepper

  • Tbsp Nutritional Yeast

  • Tbsp Maple Syrup

  • Tbsp Soy Sauce or Alternative (Tamari)

  • Handful Kale

Directions

  • Preheat oven to 425 degrees
  • Medium dice potato and toss with a drizzle of oil, herbs, spices, and nutritional yeast
  • Place on lined baking tray and cook for 30 minutes
  • Dice the onion and pepper
  • When there’s 10 minutes left in the oven, begin sautéing the onion and pepper
  • When the potatoes are done, add them to the pan with the onion and pepper. Add the kale, tamari and maple syrup and toss to combine
  • Serve! I enjoy these with a drizzle of ketchup and hemp hearts
