Spiced Sugar Cookies

Happy Holidays! Today we are baking a delicious twist on a classic cookie. These Spiced Sugar Cookies are warm and cozy with cinnamon, ginger, nutmeg, and cloves.

Perfect for the holidays and simple to make. These can be topped with additional sugar before baking to add a nice texture. They are not overly sweet to begin, so don’t worry about them being too sweet with added sugar. 🙂

Begin by creaming together the softened vegan butter and coconut sugar. Then add vanilla and applesauce, mix to combine. Then, add all spices and remaining ingredients to the bowl and mix until just combined. Place the dough in the freezer for 10 minutes to set. Meanwhile, preheat oven to 350 degrees. Remove from freezer and scoop 1-2 tbsp size cookies on a lined baking tray, press down lightly (Option to sprinkle with sugar before baking!) – Bake for 10-12 minutes. Remove from the oven, serve and enjoy!

Ingredients

  • 2 Flax Eggs (2 Tbsp Flax + 4 Tbsp Water)

  • 1/2 Cup Softened Vegan Butter

  • 3/4 Cup Coconut Sugar

  • 1 Tsp Vanilla

  • 1/4 Cup Unsweetened Applesauce

  • 1 Tsp Baking Powder

  • 1/2 Tsp Baking Soda

  • 1 Tsp Cinnamon

  • 1/2 Tsp Ground Ginger

  • 1/4 Tsp Nutmeg

  • 1/4 Tsp Ground Cloves

  • 1/4 Tsp Salt

  • 1 1/2 Cups AP Flour

  • Optional: Extra 1 Tbsp Sugar for Topping

Directions

  • Wet: Cream together the softened vegan butter and coconut sugar. Then add vanilla and applesauce, mix to combine
  • Dry: Add all spices and remaining ingredients to the bowl and mix until combined
  • Freeze and preheat: Place dough in the freezer for 10 minutes to set. Preheat oven to 350 degrees.
  • Bake: Remove from freezer and scoop 1-2 tbsp size cookies on a lined baking tray, press down lightly (Option to sprinkle with sugar before baking!) – Bake for 10-12 minutes.

Notes

  • Store in a sealed container for 5-6 days.
