Hemp Kale Caesar & Coco Bacon

I’m SO excited to share this salad! I’ve been enjoying the heck out of it lately and it’s so easy to prep in advance and mix up for lunch, throw in a wrap, on the side of dinner, anytime is a good time for this Hemp Kale Caesar & Coco Bacon.

Why hemp hearts?

These little seeds make this dressing nutritious, creamy, and delicious! Also, SO easy. You will throw all the sauce ingredients in the blender, blend for 60-90 seconds until nice and smooth. That’s it, toss it in a jar and you have dressing for the week.

Onto the coconut bacon – for this you will heat a pan over medium heat. Add the coconut shreds, tamari, maple syrup, and liquid smoke. Mix this around and let the coconut toast to your liking, this takes about 3-6 minutes. Keep it moving frequently to avoid burning. Transfer to a jar, let cool before sealing and enjoy.

To make the salad, add your desired amount of kale to a bowl, spoon some dressing overtop and massage, massage, massage. This helps the kale to absorb the dressing and makes it easier to digest. Top with coconut bacon and enjoy. You can also make this into a wrap (strongly recommend, it’s SO good).

Hemp Kale Caesar & Coco Bacon

Prep time




  • Hemp Caesar Dressing
  • 1/3 Cup Hemp Hearts

  • 2/3 Cup Water

  • 2 Tbsp Nutritional Yeast

  • 2 Tbsp Apple Cider Vinegar

  • 1 Tbsp Tamari/Soy Sauce

  • 1 Tbsp Maple Syrup

  • 1/2 Tbsp Capers

  • 1 Tsp Dijion

  • 1/4 Tsp Garlic Powder

  • 1/4 Cup Olive Oil

  • Coconut Bacon
  • 1 1/2 Cups Shredded Unsweetened Coconut

  • 1 Tbsp Tamari/Soy Sauce

  • 1 Tbsp Maple Syrup

  • 1/2 Tsp Liquid Smoke

  • Kale Salad
  • 1 Head Kale, Stems Removed and Chopped


  • Hemp Caesar Dressing: Add all ingredients to a blender, blend for 60-90 seconds until smooth.
  • Coconut Bacon: Heat a pan over medium heat, add all ingredients and cook until coconut is toasted to your liking and all liquid is absorbed, keep a close eye on it and mix frequently. Should take about 3-6 minutes.
  • For the Salad: Add chopped kale to a large bowl, add as much dressing as you desire and massage kale for a least a minute. This helps break it down and absorbs the delicious flavour 🙂 Top with coconut bacon or mix it in, serve and enjoy! (I recommend dressing right before serving)
