Protein Brownie Date Bites

I LOVE having little snacks and bites made to pick away at when I’m feeling like a quick snack during the week. These Protein Brownie Date Bites are perfect for this, made with dates and almond butter. Naturally sweetened with the addition of protein, could this snack possibly get better?

All you need is a food processor, a few minutes to spare, and 6 plant based ingredients. Drain the soaked dates (they don’t need to be soaked long, just a few minutes in warm water will do!) and add to a food processor along with the cacao powder, protein powder, vanilla, and salt. Process for a minute, stopping to scrape the sides as needed. Add the almond butter and process for an additional minute until combined.

Scoop 1 tbsp size batter and roll between hands. The texture should bind together and not stick to your hands. Repeat until all batter is used. You should get about 10 balls. You can leave as is or roll in extra cacao (as I did for half in these photos!). Store in a sealed container and enjoy ~

  • 1 Cup Soaked Dates

  • 1/8 Cup Vegan Chocolate Protein Powder

  • 1/4 Tsp Vanilla

  • 1/4 Tsp Salt

  • 1/8 Cup Almond Butter

Directions

  • Drain the dates and add to a food processor along with the cacao powder, protein powder, vanilla, and salt. Process for a minute, stopping to scrape the sides as needed.
  • Add the almond butter and process for an additional minute until combined.
  • Scoop 1 tbsp size batter and roll between hands. The texture should bind together and not stick to your hands. Repeat until all batter is used. You should get about 10 balls.
  • Store in a sealed container and enjoy ~

Notes

  • Store in a sealed container for 4-5 days
  • Option to roll balls in extra cacao after forming balls is also delicious! I did so for half in these photos.
