Crispy Dijon Thyme Smashed Potatoes

Looking for a new fun way to spice up serving potatoes? Look no further! These Crispy Dijon Thyme Smashed Potatoes are packed with unique flavour and simple to prepare.

Smashed potatoes are prepared by first boiling the potatoes in salted water until soft (I like to use baby potatoes for this). Once soft, drain them and toss with oil, herbs, dijon, and spices. Place on a baking pan or lined tray, using a glass press down on the potato to smash it. Then roast in the oven for 20-25 minutes.

The result? A crispy, flavourful potato!

Crispy Dijon Thyme Smashed Potatoes

  • 1.5 Lbs Small Potatoes

  • 1 Tbsp Olive Oil

  • 1/2 Tsp Dried Thyme

  • 1/4 Tsp Garlic Powder

  • 1/4 Tsp Salt + Extra Pinch for Salting Boiling Water

  • 1/4 Tsp Pepper

  • 3/4 Tsp Dijon


  • Begin by bringing a medium pot of salted water to a boil, add the potatoes and boil until fork tender (10-15 minutes depending on potato size). Preheat oven to 425 degrees.
  • Drain potatoes and transfer to a lined baking tray, toss with oil, Dijon, and all spices. Press down on each potato with a glass to smash it.
  • Roast for 20-25 minutes until crispy.
  • Serve and enjoy ~


  • Store leftovers in fridge for 4-5 days
